Begin your culinary journey with a refined appetiser of 90-day dry-aged Australian beef and Fine de Claire oyster tartare, served with pickled daikon, anchovy aioli, crisp shallots, and nasturtium. Follow with a comforting beef and mushroom consommé featuring beef short rib tortellini, morel mushrooms, and chive oil. For the main course, choose between a chargrilled Wagyu beef striploin paired with slow-braised beef cheek, broccolini, Roscoff onion, and lemon thyme jus, or grilled Patagonia toothfish served with a crab croquette, braised Dupuy lentils, and kombu butter seafood emulsion.
