Sajian Istana: The grand artistry of royal delicacies

The theme of this year’s Ramadan buffet, inspired by Malaysia’s royal heritage delicacies, represent a treasure trove of traditional dishes, methods and practices passed down through generations of royal families. This distinguished cuisine reflects the cultural, historical and regional influences associated with royalty, often showcasing elaborate recipes, rare ingredients and unique flavours that were once exclusively savoured by kings, queens and noble families. Rooted in luxury and authenticity, these culinary traditions emphasise the preservation of historical techniques while offering an unforgettable gastronomic experience. Upon arrival at JPteres, guests will be welcomed by the captivating rhythms of traditional Gamelan music, performed throughout the evening. This will be complemented by the graceful traditional Gamelan dance, one of Malaysia’s classic Malay dance forms, first showcased in Tanah Melayu (Malaysia) in year 1811.

At the main entrance of JPteres, guests will be greeted by the two hulubalang (palace’s warrior) dressed in traditional Malay classic outfits, setting the tone for an immersive royal experience. The décor surrounding JPteres, both indoors and outdoors, exudes a regal ambience, enhancing the overall atmosphere. Guests will be treated to an exquisite culinary journey featuring an extensive variety of royal delicacies. The appetiser section includes highlights such as Urap Kangkung Pucuk Paku, Urap Pegaga Ikan Rebus, Popiah Basah, Rojak, and assorted pickles. The Ramadan buffet continues with the Charcoal Grilled section, offering items like Kepak Ayam Bakar, Satay, Otak Otak, Sata Ikan, Udang Bakar Percik, Ketam, Kerang Bakar and many more. All ingredients are carefully sourced from sustainable seafood options, grass fed beef and free-range chicken. The JPteres specialty and Local Delicacies sections present iconic Ramadan dishes, such as Bubur Lambuk, Kambing Bakar, Gearbox Soup, Murtabak Kambing, Ambur Mutton Briyani, Lemang and Rendang. To complete the iftar experience, a delightful selection of classic local and modern desserts awaits, leaving guests with a truly unforgettable gastronomic journey.

The Chef de Cuisine of JPteres, Chef Ayub Hasan, shared, “We are bringing timeless dishes inspired by the heritage cuisine of Malaysia’s royal culinary traditions, which are rich in unique flavours. Guests will have the opportunity to savour the special highlight dishes such as Pesamah Daging, Opor Ayam Kacang, Ketupat Sotong and many others”. Among the highlights of Sajian Istana cuisine are Pesamah Daging, a tender and aromatic beef dish paired perfectly with nasi minyak or bread, and Ketupat Sotong, an East Coast delicacy of squid stuffed with glutinous rice and simmered in rich coconut-milk gravy. Guests can also enjoy Opor Ayam Kacang, a festive dish with a unique nutty twist, inspired by Malaysia’s Queen of Pahang, and Udang Galah Sambal Lado, spotlighting prawns in a fiery Minang-style chilli paste. The menu further includes Botok-Botok, a dish of herb-infused fish wrapped in banana leaves and steamed to perfection, and Nasi Ayam Claypot, a comforting claypot rice dish with crispy edges and smoky undertones. Each dish pays homage to Malaysia’s royal culinary heritage, promising a dining experience fit for royalty.
